The wine Merlot Svual by Borgo delle Oche winery
The Merlot “Svual” from the Borgo delle Oche winery comes from 100% Merlot grapes growing in the vineyards owned by the winery and planted in 2000. We are in Valvasone in the Province of Pordenone, in the heart of the DOC Grave, another amazing wine production area in Friuli Venezia Giulia.
Borgo delle Oche believes the wine is done in the vineyard and, you have to be careful not to ruin it in the cellar; for this reason, the winery practices artisanal cultivation in the vineyard without the use of pesticides or chemical substances; once in the cellar, they rely on long fermentations and the cold.
Borgo delle Oche named this wine “Svual” which in the Friulian language means flight because this is the first wine produced by the winey and it “took the flight” in 1997.
THE WINEMAKING
The harvest is strictly manual and only the selected grapes are immediately taken to the cellar. The winemaking begins with the pressing and destemming of the grapes which are then moved to steel tanks where they remain for 5 days at a very low temperature so that fermentation does not start. This step is carried out to extract all the aromatic substances and colors from the grape itself.
The crushed grapes are left to ferment in contact with the skins for over ten days, at a controlled temperature. The wine ages in steel for at least six months, after blending and bottling, it rests for a few months in the cellar before being placed on the market.

Intense ruby red with violet reflections; the aroma is elegant with pleasant hints of red fruit that leave room for spicy notes of sweet spices. Savory and well structured on the palate with velvety and never-aggressive tannins. This Merlot “Svual” from the Borgo delle Oche winery is a wine with a very long and persistent finish.

Excellent with red meats and mature cheeses. From tests with grilled meat but also with Friulan traditional dishes.
