THE WINE
The classic method sparkling wine from the Borgo Paglianetto winery is produced with Verdicchio grapes manually selected in the best vineyards owned by the winery. This limited-edition sparkling wine best expresses the flexibility of the Verdicchio vine.
A crystalline sparkling wine, which rests for over thirty-six months on the yeasts; balanced and fine with a fine and persistent bubble and a very fresh taste you will enjoy on all occasions.
THE WINEMAKING
After manual harvesting, only the selected grapes are taken to the cellar for winemaking. The must ferments in stainless steel tanks at a controlled temperature. In the spring following the harvest, the wine is bottled with the yeasts for the second fermentation and left to refine in the cellar for a period that varies between thirty-six and forty months depending on the vintage. After disgorgement, the wine rests for a few more months before being placed on the market.
THE TASTING
Straw yellow with golden reflections and a fine and persistent perlage; the aroma is intense and complex with pleasant fruity notes of yellow fruit such as peach and medlar, leaving room for herbaceous and floral notes of broom and hints of aromatic herbs to close with the classic puffs of bread. Fresh and pleasantly savory on the palate, very well balanced with a perfect correspondence between aromas and flavor. Persistence is also excellent.
FOOD PAIRINGS
This classic method from the Borgo Paglianetto winery goes well with fish and shellfish but does not disdain the aperitif. Try it with tuna tartare.
