THE WINE
With this Trendo DOC nature 100% Pinot Noir, the Cesarini Sforza winery confirms its vocation to produce the highest quality sparkling wines. The vineyards are in Val di Cembra, between 500 and 600 meters above sea level, an area almost perfect for growing vines.
Thanks to the absence of added sugar, the Noir Nature manages to enhance the purest essence of Pinot Noir. This wine is a great sparkling wine, perfect for all occasions.
THE WINEMAKING
The harvest and the winemaking of the different particles of Pinot Noir are carried out separately; after the manual harvest that takes place between the end of August and the first ten days of September, the whole bunches of the selected grapes are pressed with the Marmonier press; a press used in France for champagne which allows to obtain a clear must. Fermentation takes place at a controlled temperature in steel tanks.
In the spring following the harvest, the cuvée is created with the best particles of Pinot Noir, followed by the bottling on the yeasts for secondary fermentation. The wine ages for at least forty-eight months on the yeasts, and after the disgorgement, no “liqueur d’ expeditions” is added to avoid the alteration of the taste and to maintain the authenticity of the territory.
THE TASTING
Bright yellow with a fine and persistent perlage; the aroma is elegant with pleasant hints of red fruits typical of Pinot Noir, alternating with notes of black pepper and barley to close with hints of sweet spices. Creamy and very fresh on the palate, with a pleasant savory note and a very long and persistent finish.
FOOD PAIRINGS
This classic method from the Cesarini Sforza winery goes well with fish and shellfish but does not disdain the aperitif. Try it with the salmon tartare.
