THE WINE
The Cesarini Sforza winery confirms its vocation for producing high-quality sparkling wines, also with this Charmat Method produced with 100% Chardonnay grapes. The vineyards are in Val di Cembra, between 500 and 600 meters above sea level, an area almost perfect for growing vines.
This fresh and intense sparkling wine is perfect for summer aperitifs with friends.
THE WINEMAKING
After the manual harvest takes place in the first ten days of September, the selected grapes are pressed. Fermentation takes place at a controlled temperature in steel tanks. In the spring after the harvest, the wine moves to the autoclave for the second fermentation; it rests on the yeasts for approximately six months. Follows the bottling and a further period of refinement of a few months in the cellar before being placed on the market.
THE TASTING
Golden yellow with a fine and persistent perlage; the aroma has pleasant notes of bread crust leaving room for puffs of butter closing with mineral hints. Fresh and intense on the palate with a pleasant acid note and an excellent correspondence between aromas and flavor. Persistent
