The Wine
The Versus from the Romaldo Greco winery is 100% Negroamaro grapes grown in the vineyards owned by the winery. We are in Seclì in the province of Lecce, a flat area (76 meters above sea level) where the soil is generally clayey.
Something nice to know about the label of this bottle is that it is made with thermochromic inks that change shades based on temperature; in particular, this label “lights up” once the proper serving temperature is reached.
THE WINEMAKING
The harvest, which takes place in mid-September, is strictly manual; the selected grapes are collected in small boxes and taken immediately to the cellar for winemaking. After soft pressing, the must macerates on the skins for about 15 days. Temperature-controlled fermentation takes place in steel tanks. The wine then ages for approximately 15 months in oak barriques. After blending and bottling, the wine rests in the cellar for a few more months before being released on the market.
THE TASTING
Intense purple red; the aroma is pleasantly intense with notes of cherries in syrup and toasted almonds, which leave room for spicy tones where nutmeg prevails to finish with light puffs of vanilla. Well-structured and intense on the palate, this wine from the Romaldo Greco winery has rich and well-structured tannins and an excellent correspondence between aromas and flavour. Persistence is also remarkable.
FOOD PAIRINGS
