THE WINE
The Ribolla Gialla di Cialla from the Ronchi di Cialla winery is 100% Ribolla Gialla grapes grown in the vineyards owned by the company, located in the Valle di Cialla in Prepotto in Friuli Venezia Giulia. We are between 130 and 250 meters above sea level, in an area suitable for growing grapes.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. The grapes macerate on the skins for two days; the fermentation takes place in steel with the sole use of indigenous yeasts. The wine ages for three months in steel with frequent batonage and, after blending and bottling, it rests for a few more months in the cellar before being released onto the market.
THE TASTING
Pale straw yellow with brilliant greenish reflections. The aroma is elegant, with pleasant notes of bread crust that leave room for fruity hints of apple and pear to close with floral scents and mineral puffs. Fresh and lively on the palate, it is well-balanced with an excellent acid and savoury note. Even the correspondence between the aromas and flavours of this Ribolla Gialla from Ronchi di Cialla is almost perfect. The finish is long and persistent.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, raw fish, white meats and hard cheeses. Try it with tuna tartare.
