THE WINE
With this Trento DOC but 100% Chardonnay, the Cesarini Sforza winery confirms its vocation to produce the highest quality sparkling wines. The vineyards are in Val di Cembra, between 350 and 700 meters above sea level, an area almost perfect for growing vines.

THE WINEMAKING
After the manual harvest that takes place between the end of August and the first ten days of September, the whole bunches of the selected grapes are pressed with the Marmonier press; a press used in France for champagne which allows to obtain a clear must. Fermentation takes place at a controlled temperature in steel tanks.
In the spring following the harvest, the Chardonnay is botted on the yeasts for secondary fermentation. The wine ages for at least twenty-four months on the yeasts, and after the disgorgement, no “liqueur d’ expeditions” is added to avoid the alteration of the taste and to maintain the authenticity of the territory.
THE TASTING
Golden yellow with a fine and persistent perlage; the aroma is elegant with pleasant hints of white flowers that intertwine with citrus notes to close with sweet sensations of cotton candy and brioche. Creamy and very fresh on the palate with a pleasant savoury note and a persistent and well-structured finish.
FOOD PAIRINGS
This classic method from the Cesarini Sforza winery goes well with fish and shellfish but does not disdain the aperitif. Try it with fried fish.
