THE WINE
The sparkling Ribolla Gialla of the Obiz winery is produced with 100% Ribolla Gialla grapes grown in the vineyards owned by the winery and located near Aquileia in Friuli Venezia Giulia. This is a great area for the viticulture since Roman times, as evidenced by the numerous amphorae that were found inside the property. The alluvial soil, rich in clay and sand; the proximity to the Adriatic sea and the protection of the Julian Alps allow the cultivation of the vine with excellent results.
THE WINEMAKING
The harvest is strictly manual and occurs in the early dawn hours. Once in the cellar, the grapes are softly pressed after a short maceration on the skins at a controlled temperature of 12°C. Fermentation takes place in steel and lasts about eight days. The wine ages on the yeasts in steel tanks and then moves to small autoclaves for the second fermentation, where it remains in contact with the selected yeasts for about ten months (Long Charmat).
The Obiz winery practices integrated pest management and since 2017 has been cultivating its vines according to the regulations set out in the Disciplinary.
THE TASTING
right straw yellow with a fine and persistent perlage; the aroma is delicate with pleasant fruity notes where apple and peach prevail, leaving room for light hints of dried fruit. Fresh and dry on the palate, with an excellent correspondence between aromas and flavour. Persistence is also outstanding.
