THE WINE

The wine “Omaggio Floreale” of the Soffio sulle Isole winery is produced with 100% Ciliegiolo grapes grown on the island of Vulcano, one of the seven islands that form the Aeolian archipelago in Sicily. Although the island is of volcanic origin, the vineyards are located in a very fertile territory in the “Piano” area, a real plain, 420 meters above sea level.

THE WINEMAKING

After the manual harvest which takes place in the first half of September, only the selected grapes are brought to the cellar for winemaking. The grapes are de-stemmed and softly pressed. The fermentation at a controlled temperature of 14-15°C occurs in stainless steel tanks. The wine obtained is bottled immediately to preserve the perlage at the end of fermentation.

THE TASTING

Pale pink, this wine is slightly wavy. The aroma is pleasant with sweet fruity notes where raspberry and cherry prevail, leaving room for hints of undergrowth. Full-bodied and well balanced on the palate, with a good correspondence between aromas and flavor. Persistence is also good.

goes well with white meats, fish and medium-hard cheeses.
