THE WINE
The Soave Foscarino from the Santa Sofia winery is 100% Garganega grapes grown in the winery’s vineyards. The Monte Foscarino area, from which this label takes its name, is located in the northern Soave area and is characterized by volcanic soils. It is precisely the soils that make this wine mineral complex but also elegant.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar where they are destemmed and softly pressed. The winemaking is traditional in white and the wine ages in stainless steel tanks for a period that varies depending on the vintage. After assembly and bottling, the wine rests for at least three months in the cellar, before being placed in the market.
THE TASTING
Pale straw yellow with greenish reflections; the aroma is fresh with pleasant notes of peach that alternate with hints of orange peel, leaving room for scents of star anise and puffs of acacia closing with mineral memories. Fresh and warm on the palate, this Soave from the Santa Sofia winery has an almost perfect correspondence between aromas and flavours. Pleasantly savoury, it invites you to drink; the finish is long and persistent.

Excellent with fish, soft cheeses and eggs. Try it with the Italian “mozzarella in carrozza” (breaded and fried mozzarella)
