THE WINE
The Recioto di Soave Classico Mid of the Rocca Sveva winery is 100% Garganega grapes grown on the hills east of Verona in Veneto; in this area, you can find the most important regional DOC and DOCG, well-known at the worldwide level. In particular, the FAO (Food and Agriculture Organization of the United Nations) has recognized the vineyards of Soave as the first historical rural landscape in Italy, an agricultural heritage of global importance.
Rocca Sveva is a charming medieval village transformed into a winery of excellence. This Recioto is also part of the careful selection of wines of the Veronese tradition; sweet but never cloying wine, perfect for meditation or at the end of a meal with desserts and cheeses.
THE WINEMAKING
The harvest is strictly manual, and the selected grapes are left to dry for at least four months in the fruit cellar. The winemaking begins with pressing when at least 20% of the grapes have been attacked by Botrytis, the noble rot accentuates the wine flavour and aromas. The fermentation starts in steel and continues in French oak barrels. The refinement occurs in French oak barrels where the wine rests for at least twelve months; after assembly and bottling, the wine refines for another twelve months in the cellar before being released on the market.
THE TASTING
Intense golden yellow with coppery reflections; the aroma is pleasantly sweet with hints of candied fruit that alternate with notes of fruit in syrup to continue with scents of pineapple, fig and date closing with honey puffs. Soft and fresh on the palate with a good correspondence between aromas and flavour and a long and persistent finish.
