IL VINO
The Prosecco Extra Dry from the Val D’Oca winery is a blend of 85% Glera and 15% other white grapes, all grown in the vineyards located in the most suitable areas for the production of Prosecco between Treviso and Valdobbiadene. This label is part of the “Contemporary” line that the winery defines as a classic soul with a contemporary personality.
The winery was founded in 1952 by 129 producers who wanted to join forces to make their wine quality known worldwide. Val D’Oca is based in Valdobbiadene and is certified organic.
THE WINEMAKING
After harvesting, the selected grapes are taken to the cellar and softly pressed. Fermentation takes place in steel tanks. The wine moves to an autoclave for the sparkling process, where it remains for a few months at a constant low temperature; after bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Bright straw yellow with a fine and persistent perlage; the aroma is pleasantly fruity with hints of apple, pear and white peach that alternate with floral notes to close with hints of sage. Fresh on the palate with a pleasant savoury note and a good correspondence between aromas and flavour. Good persistence.
FOOD PAIRINGS
This Prosecco Extra Dry is excellent as an aperitif and goes well with fish and cold cuts. Try it with focaccia and San Daniele raw ham.
