IL VINO
The Spumante Extra Dry Specchio (mirror) wine from the Val D’Oca winery is a blend of Glera and Pinot Nero grapes, all grown in vineyards located in the most suitable areas for growing vines between Treviso and Valdobbiadene. For this label, the winery has combined the Glera grapes used to produce Prosecco and the elegant Pinot Noir, which, for the occasion, is vinified in white.
The winery was founded in 1952 by 129 producers who wanted to join forces to make their wine quality known worldwide. Val D’Oca is based in Valdobbiadene and is certified organic.
THE WINEMAKING
After harvesting, the selected grapes are taken to the cellar and softly pressed. Fermentation takes place in steel tanks. The wine moves to an autoclave for the sparkling process, where it remains for a few months at a constant low temperature; after bottling, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Bright straw yellow with a fine and persistent perlage; the aroma is pleasant with floral scents that alternate with fruity notes of apple and white peach. Fresh and soft on the palate with a savoury note and a good correspondence between aromas and flavour. Good persistence.
FOOD PAIRINGS
This Prosecco Extra Dry is excellent as an aperitif and goes well with fish, cold cuts and white meat. Try it with roast chicken.
