IL VINO
The Lessini Durello DOC Collineri Riserva from the Montecchia di Crosara winery is 100% Durella grapes. Durella is the native vine of the Lessini Mountains in Veneto; it is a white grape, ancient and rustic, with a compact bunch; the name comes from the hardness of the grape skin and the high acidity that makes it perfect for sparkling wine.
This label is called Collineri (dark hills) to honour the black volcanic soil where the vineyard grows.
We are in Montecchia di Crosara in the Veneto area of the Lessini Mountains, a highly suited area for producing sparkling wines.
THE WINEMAKING
After the harvest the selected ones are taken to the cellar for winemaking, beginning with a soft pressing. The must ferments in steel tanks at a controlled temperature; the spring after the harvest, the wine is bottled with the addition of yeasts for the second fermentation and ages for thirty-six months. After disgorging, the wine rests for a few more months in the cellar before being released onto the market.
THE TASTING
Straw yellow with golden reflections and a fine and persistent perlage; the aroma is elegant with pleasant notes of lime and bergamot that intertwine with hints of lemon balm to close with puffs of sage. Fresh and soft on the palate, this classic method sparkling wine is creamy with a pleasant mineral note and a long and persistent finish.
FOOD PAIRINGS
The Lessini Durello DOC Collineri sparkling wine is excellent as an aperitif and goes well with fish but also with white meats and medium-aged cheeses. Try it with tuna tartare.
