IL VINO
The sparkling wine Babb’o bianco from the Tenuta Gorghi Tondi winery is a bland of grapes Grillo, Zibibbo, Damaschino native grapes grown in vineyards owned by the winery. We are near Mazara del Vallo in the westernmost part of Sicily, a stone’s throw from the sea and the sea breezes. The estate is located within a nature reserve protected by the WWF.
The winery is a family-run winery run by women, and since 2016 all vineyards have been certified organic, which means that all the wines are organic and carry the famous green leaf on the label. Both in the vineyard and in the cellar, there is the utmost respect for nature and its balance.
This Babb’o bianco is part of the “Le Maioliche” line, it includes native Sicilian wines that carry the oldest Sicilian ceramics on the label. Babbìo Bianco is a playful wine, full of vivacity in the mouth it recalls the saltiness of the Sicilian sea and the sun’s intensity; a wine to be drunk with the nicest friends. Even the name is playful, Babbìo in its serious declination means dad while in the joking one, it is used to indicate a silly person.
THE WINEMAKING
After the harvest, only the selected grapes go to the cellar for winemaking, starting with a soft pressing. The must ferments in steel tanks at a controlled temperature. It is then moved to the autoclave where it remains for thirty to forty days. During this period the wine obtains a light fizziness that makes it lively. After bottling, the wine rests for two more months in the cellar before being released onto the market.
THE TASTING
Straw yellow with greenish reflections; the aroma is intense with pleasant hints of fresh white-fleshed fruit that alternate with citrus notes. Very fresh on the palate with a savoury note and a long and persistent finish.
FOOD PAIRINGS
The white Babbìo is perfect as an aperitif and pairs well with fish and white meats. Try it with shrimp tartare.
