IL VINO
The Coste a Preola Grillo from the Tenuta Gorghi Tondi winery is produced with 100% Grillo grapes, grown in vineyards owned by the winery. We are near Mazara del Vallo in the westernmost part of Sicily, a stone’s throw from the sea and the sea breezes. The estate is located within a nature reserve protected by the WWF.
The winery is a family-run winery run by women, and since 2016 all vineyards have been certified organic, which means that all the wines are organic and carry the famous green leaf on the label. Both in the vineyard and in the cellar, there is the utmost respect for nature and its balance.
The wine takes its name from the vineyard the grapes come from, named “Coste a Pietra”, to pay homage to the Sicily biodiversity. This wine is part of the territorial line because it fully represents the territory it comes from; this Grillo represents the union the winery has with Sicily and with the naturalistic oasis.
THE WINEMAKING
After the grape harvest which takes place in the second ten days of August, only the selected grapes go to the cellar for winemaking, which begins with soft pressing. The must ferments in steel tanks at a controlled temperature. The refinement also occurs in steel, where the wine ages for about five months on the noble lees. After assembly and bottling, the wine rests for a few more months in the cellar before being released on the market.
THE TASTING
Bright straw yellow with greenish reflections; the aroma is elegant with pleasant hints of tropical fruit that intertwine with mint and scents of white peach to close with puffs of pineapple; fresh and excellently balanced on the palate, Coste a Preola has an excellent acidic note and a long and persistent finish.
FOOD PAIRINGS
The Coste a Preola Grillo pairs well with shellfish, fish soups, white meats and vegetables. Try it with baked sea bass.
