The wine from Tiare winery
The Sauvignon from the Tiare winery is 100% Sauvignon grapes grown in the company’s vineyards in Dolegna del Collio, in the heart of the DOC Collio region. This area is renowned for its soil, rich in stratified marl and sandstone, giving unique characteristics to the wines produced here.
This particular Sauvignon is the winery flagship, awarded the prestigious three glasses by the Gambero Rosso wine guide for nearly a decade which is the highest recognition given by the magazine to the finest labels from Italian wineries.
THE WINEMAKING
The harvest is manual and accounts for the entire month of September, depending on the vineyard’s location. Once the grapes arrive at the cellar, winemaking begins with a cold cryomaceration process to extract all the aromas, followed by a gentle pressing. Fermentation is carried out in steel tanks using only selected yeasts. The wine then ages in these steel tanks until February of the following year, when it is blended and bottled. The bottles are kept in the cellar for a few more months before being released to the market.
Tasting the Sauvignon from Tiare
This Sauvignon exhibits a straw yellow colour with greenish reflections. On the nose, it is pleasant, showcasing notes of broom that intermingle with elderberry, complemented by hints of pink grapefruit and concluding with a touch of mango. It is intense and well-structured on the palate, offering a fresh profile with excellent acidity that invites further sipping, leading to a long and persistent finish.
