The wine from Tiare winery
The Cabernet Sauvignon by Tiare Winery is produced exclusively from Cabernet Sauvignon grapes grown in the estate vineyards located in Moraro, a small town in the Isonzo Valley, within the province of Gorizia. The region’s gravelly and calcareous soil is ideal for cultivating red grape varieties.
THE WINEMAKING
The harvest is manual, and to ensure the integrity of the bunches, they are collected in crates. Upon arrival at the cellar, winemaking begins with a maceration period of approximately ten days, followed by a gentle pressing of the grapes. Fermentation occurs in stainless steel tanks at a controlled temperature; 40% of the wine ages for at least twelve months in oak barrels and 60% in steel tanks. After blending and bottling, it rests for a few additional months before being released to the market.
Tasting the Malvasia from Tiare
This wine has an intense ruby red colour that deepens to garnet over time. On the nose, it offers pleasant aromas of dried fruit, predominantly plum, which are complemented by hints of blackcurrant and finished with notes of chocolate. This Cabernet Sauvignon is well-structured and harmonious on the palate, featuring well-integrated tannins and a long, lingering finish. It can be left to age in the cellar for a few years.
