The wine Cabernet Sauvignon from Castello di Spessa winery
The Cabernet Sauvignon from Castello di Spessa is born from the collaboration with the oenologist Enrico Paternoster, from Trentino Alto Adige, who combines freshness and refinement with structure and longevity to all the wines of the winery. The vineyards are located in Cormons in the heart of the DOC Friuli where the soil is mainly made up of clay and sand with gravel.
THE WINEMAKING
After the harvest which takes place in the first ten days of October, the grapes are brought to the cellar for the winemaking which takes place in steel at a controlled temperature. The wine is then aged for about 12 months in large oak barrels. After refining, the winery proceeds with the assembly and bottling; the wine is then left to rest for a few more months in the cellar before being placed on the market.
Tasting the Cabernet Sauvignon by Castello di Spessa
Intense ruby red. The aromas is fragrant with a delicate fruity scent of raspberry and blackberry that intertwines with notes of violet to close with light hints of sweet spices. Warm and soft on the palate, this wine is very well balanced with excellent persistence.
FOOD PAIRINGS
It goes well with game, red meat and hard cheeses. Must try with stewed meat.
