The wine Sauvignon by Ferruccio Sgubin
The Sauvignon from the Ferruccio Sgobin winery is produced from Sauvignon grapes grown exclusively in the estate vineyards located in the Mernico area of Dolegna del Collio, in the province of Cormons, in the heart of the DOC Collio region in Friuli Venezia Giulia. Situated 150 meters above sea level, the vineyard features soil rich in marl and sandstone, locally known as Ponca. The winery has been certified organic (BIO) since 2023, and it has practised sustainable cultivation in previous years, with a particular focus on the protection of bees.
THE WINEMAKING
The harvest is conducted entirely by hand when the grapes achieve the ideal balance of sugars and acidity. The peculiarity of the harvest of this Sauvignon is that it is done in two different sections; the priority is given to the typicality of the grape; in the second harvest, the priority is given to the aromatic complexity.Once the grapes are in the cellar, the winemaking begins with skin maceration, followed by gentle pressing. The must ferments at a controlled temperature of 16°C in stainless steel tanks. The wine is then aged in steel “sur lies” until spring following the harvest. After blending and bottling, it rests in the cellar for a few additional months before being released to the market.
Tasting the wine by Ferruccio Sgubin winery
This wine has an intense straw-yellow colour. The aroma is elegant, featuring pleasant floral aromas dominated by jasmine, complemented by herbaceous notes and fruity hints, finishing with light touches of lime. On the palate, it is fresh, with a strong correspondence between the scents and flavours. It concludes with a long, slightly balsamic finish.
FOOD PAIRINGS
Ideal as an aperitif, it pairs well with fish, white meats, and pasta or risotto featuring vegetable sauces. It is also excellent with fried fish.
