The wine Schioppettino by Ferruccio Sgubin
The Schioppettino from the Ferruccio Sgobin winery is produced from Schioppettino grapes grown exclusively in the estate vineyards located in the Mernico area of Dolegna del Collio, in the province of Cormons, in the heart of the DOC Collio region in Friuli Venezia Giulia. Situated 150 meters above sea level, the vineyard features soil rich in marl and sandstone, locally known as Ponca. The winery has been certified organic (BIO) since 2023, and it has practised sustainable cultivation in previous years, with a particular focus on the protection of bees.
THE WINEMAKING
The harvest is manual and occurs when the grapes are perfectly ripe, particularly when the skin and tannins reach ideal ripeness. Once the grapes arrive at the cellar, the winemaking begins with a twelve-day maceration on the skins. The must ferments at a controlled temperature of 26°C in stainless steel tanks. The wine then ages fourteen to sixteen months, 50% in steel and 50% in 500-liter oak barrels. After blending and bottling, the wine rests for at least four more months in the cellar before being released to the market.
Tasting the wine by Ferruccio Sgubin winery
The wine has an intense garnet-red colour. It features pleasant hints of red fruit, complemented by spicy notes, with black pepper being the most prominent. It is well structured on the palate; the tannins are noticeable yet smooth. The connection between the aromas and flavours is almost perfect, leading to a long and persistent finish.
FOOD PAIRINGS
It pairs well with red meats, game, and aged cheeses. For a great combination, try it with the classic barbecue
