The Nobile di Montepulciano Riserva from Ambrogio and Giovanni Folonari winery is produced only in exceptional years when the Sangiovese grapes are at their best<, the Sangiovese grapes come from the TorCalvano estate, which is situated between Valdichiana and Val d’Orcia in the province of Siena. This region has been ideal for cultivating high-quality Sangiovese grapes for over 300 years.
THE WINEMAKING
After the manual harvest, the selected grapes are promptly taken to the cellar for winemaking. This process begins with a maceration on the skin lasting about ten days. Fermentation takes place in steel at a controlled temperature. The wine ages thirty-six months, for the first twenty-four in steel tanks and the remaining twelve in oak barrels; after assembly and bottling, the wine rests for a few more months in the cellar before being released onto the market.
Tasting the wine
Garnet red with a delicate, pleasant floral aroma featuring sweet violet notes that alternate with fruity hints of cherry, concluding with spicy undertones, where vanilla and white pepper stand out. On the palate, it is well-balanced, with present yet well-integrated tannins and a refreshing acidity that invites repeated sips; there is a good harmony between the fragrances and flavours, making it persistent and pleasingly fruity.
