The B.S.T. Cabernet Sauvignon & Merlot from the Ambrogio and Giovanni Folonary winery is a member of the B.S.T. (Baby Super Tuscan) family. This wine embodies the youthful evolution of Tuscan winemaking. It features a typical blend of the cost of Tuscan Supertuscans with a strong and full-bodied character.
THE WINEMAKING
After the manual harvest, the selected grapes are promptly taken to the cellar for winemaking. This process begins with a maceration on the skin lasting about four weeks. Fermentation occurs in steel tanks at a controlled temperature. The wine is aged in these tanks after blending and remains in the cellar for several months before being released to the market.
Tasting the wine
The wine features a reddish hue with purple undertones. On the nose, it’s inviting with delightful fruity aromas of blackberries and blueberries, complemented by hints of liquorice and subtle menthol. On the palate, this BST Cabernet Sauvignon & Merlot offers a solid body and is well-structured, showcasing noticeable yet well-integrated tannins. The finish is lengthy and persistent.
