The Classic Method Pas Dosé by Tenute Vidi
THE WINEMAKING
The grapes are hand-harvested, and the selected ones go quickly to the cellar for winemaking. The process begins with a gentle pressing. Fermentation occurs in steel tanks at a controlled temperature. The wine ages on the lees in steel until the end of May following the harvest, when it is bottled on the lees for a second fermentation, adhering to the rigorous Trentodoc specifications; the sparkling wine then ages for over forty-two months on the lees. After disgorgement, it rests for at least four more months in the cellar before being released to the market.
Tasting the Classic Method
Bright straw-yellow with an elegant bubbly texture; the aroma presents intense and complex aromas, with delightful floral notes intermingling with hints of liquorice and citrus. It concludes with subtle nuances of bread crust and gunpowder. This sparkling wine is elegant on the palate, dry and fresh, showcasing a prominent mineral character that reflects the soil where the grapes are grown. The aftertaste is long-lasting, leaving a refreshing acidic note that cleanses the palate.
