The Classic Method Rosè by Tenute Vidi
THE WINEMAKING
The grapes are hand-harvested, and the selected ones go quickly to the cellar for winemaking. The process begins with a gentle pressing. Fermentation occurs in steel tanks at a controlled temperature. The Pinot Noir undergoes a brief cold maceration to help enhance the extraction of colour. The wine ages on the lees in steel until the end of May following the harvest, when the cuvée is assembled and is bottled on the lees for a second fermentation, adhering to the rigorous Trentodoc specifications; the sparkling wine then ages for over forty-two months on the lees. After disgorgement, it rests for at least four more months in the cellar before being released to the market.
Tasting the Classic Method
This wine has a delicate pink colour and features fine, persistent bubbles. The aroma is intense, offering delightful fruity notes of wild strawberries and raspberries, complemented by hints of lemon and peach blossoms. On the palate, it is fresh, with a wonderful correlation between the aromas and flavours. The finish is long-lasting and persistent.
FOOD PAIRINGS
Vidi Rosé Trentodoc is excellent as an aperitif and is perfect with raw fish and cold cuts. Try it with oysters.
