The Sauvignon Wine from Valpanera Winery
Valpanera Winery produces Sauvignon wine from 100% Sauvignon grapes cultivated in its estate vineyards near Cortona di Fiumicello, where the Torre stream once flowed. The region’s soils are rich in limestone and primarily consist of silt, sand, and gravel.
This wine is fresh and aromatic, with the winery describing it as “the golden reflection of summer in a white wine.”
THE WINEMAKING
The grape harvest is conducted manually during the first week of September; the must ferments in stainless steel tanks at a controlled temperature, and the refinement process occurs in steel on the fine lees. After blending and bottling, the wine rests in the cellar for a few additional months before being released to the market.
Tasting the wine by Valpanera
The wine is bright straw yellow; it offers pleasant aromatic notes of elderflower, which alternate with fruity hints of ripe mesca and finish with subtle tea leaf scents. It is well-structured on the palate with a pleasant savoury note. This Sauvignon boasts refreshing acidity and a long, persistently enjoyable finish.
FOOD PAIRINGS
This wine is excellent as an aperitif and pairs beautifully with fish, fresh cheeses, and white meats. It is also worth trying alongside cured meats.
