The Aqvilio, Refosco Dal Peduncolo Rosso Riserva Wine from Valpanera Winery
The Aqvilio wine from the Valpanera winery comes from 100% Refosco dal Peduncolo Rosso grapes growing in the vineyards owned by the winery and located near San Martino; this area boasts some of the richest clay and iron soil.
This wine is elegant and well-structured; it ages in wood for a minimum of two years. It is full-bodied and pairs exceptionally well with red meats and game. Notably, this wine has great ageing potential, reaching its peak flavour 4 to 5 years after bottling.
THE WINEMAKING
The grape harvest is manual. Ninety per cent of the grapes are harvested by the end of September, while the remaining 10% are left to wither on the vine until the first half of October. Once in the cellar, winemaking begins with skin maceration followed by fermentation in stainless steel tanks. The wine undergoes refinement in French and American oak barriques for at least twenty-four months. After blending and bottling, the wine is rested in the cellar for at least six months before being released to the market.
Tasting the wine by Valpanera
Aqvilio presents an intense ruby-red colour with garnet reflections. On the nose, it is complex, featuring pleasant hints of fried red fruits typical of Refosco, intertwined with notes of cherry jam, tobacco, and vanilla, accented by a touch of spice. On the palate, it is well-structured, with tannins that are present yet silky and well-integrated. The finish is long, persistent, and pleasantly tannic.
FOOD PAIRINGS
Aqvilio by Valpanera pairs beautifully with red meats, game, and aged cheeses, making it an excellent choice to enjoy alongside a classic Florentine steak.
