THE WINEMAKING

The grape harvest occurs manually during the second half of September. The must then ferments in stainless steel tanks at a controlled temperature; the wine ages in steel for a period that varies depending on the vintage. After blending and bottling, the wine rests in the cellar for a few months before being released to the market.
