The Noir Pas Dosè Millesimato from Piè di Mont winery
The Noir Pas Dosè sparkling wine from Piè di Mont winery is a pure Pinot Noir vinified in white. Over the years, thanks to the maturity of the vines, the winery has been able to select small quantities of clusters that are qualitatively suitable for producing reserves. The vineyard, located in Piedimonte in the municipality of Gorizia, grows on marly and shallow soils at 100 meters above sea level.
Located at the foot of Mount Calvario, with a Southeast orientation, the vineyard enjoys a wide temperature range thanks to the sun, which sets behind the mountain in the early hours of the afternoon. This temperature difference helps give the sparkling wine a more intense character and well-balanced acidity.
The Winemaking
Starting mid-September, the harvest is carried out entirely by hand, using crates. The operation takes place exclusively during the cooler hours of the day to preserve the integrity and optimal temperature of the clusters. The grapes are vinified in steel tanks through a gentle pressing for 90%, while the remaining 10% ages in new 225-litre barriques. The cuvée is blended and bottled for the second fermentation in May. The ageing on the lees lasts for a minimum of 50 months. After disgorgement, the bottles age in the cellar for 12 months.
Tasting the Piè di Mont wine
The Noir Pas Dosè presents a brilliant straw-yellow colour with golden reflections. On the nose, it offers a complex bouquet of notes of black currant, sour cherry, and raspberry, alternating with hints of violet and cyclamen, complemented by a delicate aroma of bread crust, finishing with spicy hints of cloves and nutmeg. It is dry, fresh, and mineral on the palate, with good structure and persistent effervescence. The finish is elegant and long, with a pleasant almond note that invites another sip. This wine is ideal for those seeking an authentic and refined sensory experience.

It pairs perfectly with fish dishes, shellfish, and seafood thanks to its freshness and liveliness; it also goes well with light appetizers, such as tuna tartare or carpaccio, and dishes featuring grilled vegetables; it can also be served with fresh and aged cheeses, creating an interesting contrast between the creaminess of the cheese and the freshness of the wine. Finally, it is an excellent companion for truffles and foie gras.
THE WINERY
The winery was founded in 1983 by Paolo Rizzi but at that time he did not produce wine but planted the vine cuttings by hand on the steep hills of this area of the Collio Friulano.
