This Pas Dosé rosé sparkling wine from I Sabbioni winery is certainly different from the classic methods we know, as it is made from pure Sangiovese grapes and stands out for its captivating coppery color, tending towards antique pink. This wine is the result of careful and meticulous attention to viticulture and winemaking processes, offering a unique sensory experience.
The winemaking
The manual harvest takes place towards the end of August. The winemaking involves a process of gentle pressing and crushing of whole grapes, followed by a maceration of 6-8 hours. The Sangiovese grapes, sourced from Romagnolo clones, are inoculated with selected yeasts to ensure the quality of the wine. The aging occurs in stainless steel for 8 months at controlled temperature, followed by bottle fermentation, where the wine remains on the lees for a minimum of 18 months. Before being marketed, the wine rests in the bottle for an additional 5 months and is disgorged without the addition of sugar.
Tasting the sparkling wine
The wine presents a striking coppery color. On the nose, it releases fresh floral and fruity notes that evolve into hints of currant, wild strawberry, pomegranate, and candied orange, accompanied by subtle hints of tobacco. On the palate, the attack is round and enveloping, with a mineral freshness that enhances the wine’s structure. The fine and persistent perlage caresses the palate, concluding with notes of pink pepper, sweet almond, and aromatic moss.

This wine is ideal as an aperitif and pairs perfectly with a variety of dishes. It is particularly suitable for accompanying crustaceans, both raw and cooked, tartare, or fish carpaccio, as well as cured meats like prosciutto.
