The wine Tatù from the I Sabbioni winery
Tatù is a passito wine made from Sangiovese grapes; it is an excellent product that embodies the Italian wine tradition, particularly that of the Romagna region. This wine, characterized by an intense dark garnet color and a dense consistency, stands out for its rich and complex aromatic profile. The vinification of this passito follows traditional methods that enhance the unique characteristics of this grape variety.
The winemaking
The winemaking process begins with the selection of grapes, which are harvested in the second decade of September. The grapes used for this wine come from Romagna clones, particularly the large-berried ones, known for their ability to develop intense aromas and a good structure. After harvest, the grapes are laid out in a drying room, where they undergo a withering process lasting about 40 days. This step is crucial as it allows the grapes to concentrate their sugars and aromas. Subsequently, there is a 15-day maceration, during which the skins remain in contact with the must, extracting color and tannins. The wine then ages for at least a year in oak barriques. The result is a wine with a strong and harmonious character.
Tasting the Passito
Tatù displays a deep dark garnet color. On the nose, this wine releases evocative aromas that recall the sweet memories of autumn, featuring notes of chestnut, caramelized fig, and black olive. These complex aromas blend into an enveloping and intriguing olfactory experience. On the palate, the wine reveals itself to be smooth and wise, with a structure that invites a second sip. The balance between sweetness and acidity is perfect, making it an indispensable wine for lovers of this type.
Food Paring
Tatù passito wine is an ideal companion for a wide variety of desserts. It is particularly recommended with fruit-based sweets, such as tarts and cakes, which enhance its sweetness. Its versatility also makes it a great pairing for dark chocolate, creating a fascinating contrast between the enveloping notes of the wine and the bitterness of the chocolate. Served at the end of a meal, this passito can transform any dinner into a memorable event, providing moments of pure joy and appreciation for the art of winemaking. Concluding a meal with a glass of this wine means indulging in a unique sensory experience that deserves applause.
