The Winemaking
The grape harvest is strictly carried out by hand, ensuring careful selection of the best ripe bunches. During this phase, frequent pump-overs are performed, essential for promoting the extraction of color and noble tannins. After racking, the wine completes alcoholic and malolactic fermentation, undergoing appropriate transfers. Finally, the wine is allowed to mature slowly in the underground cellar before bottling.
Tasting the wine of the winery
The Refosco presents itself with an intense ruby red color, enriched with violet reflections that tend towards garnet with aging. On the nose, broad and intense aromas are perceived, with fruity notes of wild blackberry and raspberry, accompanied by hints of cocoa and tobacco. On the palate, the wine reveals itself as dry and full-bodied, with remarkable structure and a slightly bitter finish, while a delicate hint of vanilla integrates harmoniously with the other aromas and flavors.
