THE WINE
The Amadeus Brut sparkling wine from the Castello di Spessa winery is a blend of Chardonnay and Pinot Noir grapes grown in the vineyards owned by the winery and located in the municipalities of Capriva del Friuli and Cormòns; more precisely between the alluvial plain of the Isonzo river and the Eocene reliefs of the Collio Goriziano. The Collio Friulano has always been considered a land of great wines, where the concept of terroir known as “ponca”, finds its maximum expression.
THE WINEMAKING
After the strictly manual harvest, the selected grapes are wine made separately; the winemaking begins with a very soft pressing of the whole bunches; the maximum yield of the must is low (about 50%) and is kept so low to obtain a fine and well-balanced wine. Fermentation takes place in steel tanks at a controlled temperature of 18° C. Part of the wine ferments in steel tanks while the other part in French oak barrels. The wines age for about eight months, followed by the cuvée creation and bottling on the lees for the second fermentation. The wine rests on the lees in the amazing Castello di Spessa cellars for about 40 months.
THE TASTING
Slightly golden yellow with bright greenish reflections and a very fine and persistent perlage; the aroma is pleasant with floral notes that alternate with citrus hints to close with mineral hints. Fresh and pleasantly savory on the palate, well structured with a long and pleasantly aromatic finish.
FOOD PAIRINGS
The Amadeus sparkling wine is excellent with fish, even raw, and medium-hard cheeses; try it with white meats.
