The wine Ripasso by Rocca Sveva
The Valpolicella Superiore Ripasso from the Rocca Sveva winery is a blend of Corvina, Corvinone and Rondinella grapes grown on the hills east of Verona in Veneto; in this area, there is the most important regional DOC and DOCG known throughout the world.
Rocca Sveva is a charming medieval village transformed into a winery of excellence. The Valpolicella Superiore Ripasso is part of a wine selection from the Veronese tradition. This Ripasso is an elegant, harmonious and silky wine that gives its best with a nice plate of tagliatelle with ragù sauce.
THE WINEMAKING
The harvest is strictly manual and only the selected grapes go to the cellar for winemaking in stainless steel containers. The peculiarity of the Ripasso wine is that the wine ferments a second time in contact with the Amarone marc for about 8-10 days. The wine ages twelve to eighteen months, depending on the vintage; 30% in oak barriques and the remaining 70% in oak barrels. After assembly and bottling, the wine rests for a few more months in the cellar before being released in the market.
Tasting the Valpolicella Superiore Ripasso
Intense ruby red, if left to age, orange reflections appear; the aroma is intense with pleasant hints of fruit, where cherry and blackberry prevail, continuing with puffs of sweet spices and closing with hints of vanilla. Warm and soft on the palate, the Valpolicella Superiore Ripasso is an elegant and well-structured wine with velvety and harmonious tannins and a long and persistent finish.
