The Merlot Bio from the Sturm winery is part of the organic wines line produced by the winery, which emphasizes respecting the ecosystem and its natural cycles. All activities in the vineyard and the cellar are conducted according to the lunar cycle. This merlot is 100% Merlot grapes grown in Sturm’s vineyards, which have an average age of forty years and are in Cormons, in the province of Gorizia.
THE WINEMAKING
The harvest is strictly manual and takes place in October. Only the selected grapes go to the cellar. The winemaking begins with the destemming of the bunches and the maceration on the skins with the indigenous yeasts for a period that varies depending on the vintage. The must ferments in steel tanks at a controlled temperature of 18°C and ages on the yeasts in oak tonneaux for a period that varies depending on the vintage but exceeds at least twelve months. After bottling, the wine rests in the cellar for a few months before being released onto the market.
Tasting the wine from Sturm
The wine presents an intense ruby-red colour. On the nose, it is elegant, revealing hints of wild berries that alternate with cherry, blackcurrant, and blackberry. These fruit notes are complemented by intense whiffs of liquorice and spicy sensations, finishing with pleasant balsamic hints. It is harmonious and enveloping on the palate, with a nearly perfect correspondence between the aromas and the flavours. The wine boasts excellent persistence and a long finish.

This wine pairs well with red meats, especially grilled ones, and with hard cheeses. Try it with blue cheeses like Gorgonzola.
