The Nevaio Gin
Nevaio Gin is an Italian artisanal gin that stands out for its attention to the quality of ingredients and the production process. The gin is produced in the Alta Valle del Chiese in Trentino Alto Adige, a territory characterized by mountainous landscapes and rich biodiversity. Its formula is inspired by the surrounding nature, using local botanicals and selected ingredients.
Production process
Water is the fundamental ingredient of every gin, and for Nevaio, the water used is the mineral water CEDEA® from Canazei, which comes from the melting snow of the Dolomites; now you know where the name NEVAIO derives from, evoking the magnificence of eternal snow.
Talking about gin, you immediately think of herbs, spices, and fruits. However, juniper is the only mandatory botanical by law; Nevaio gin uses only the best juniper available on the market. This minimalist approach highlights the purity and authenticity of the distillate. For the alcohol, the distillery uses a product from Piedmont made from 96% organic cereals, which enhances the aroma and complexity of the gin.
The juniper of Nevaio undergoes a two-phase process: the first consists of a cold infusion lasting 10 days in alcohol diluted with water. In the second phase, during distillation, a small amount of fresh juniper is placed in the “Botanical Basket,” coming into contact only with the vapours. This method gives the gin a distinctive character and unparalleled depth of flavour. After distillation, the gin rests in steel before being filtered to ensure maximum purity.
The Master Distiller
Enzo Poli is the master distiller from Santa Massenza in the Valley of Lakes. A fourth-generation member of a family of artisanal distillers, Poli uses a discontinuous bain-marie copper still; this gin was born from his experience and passion.
