THE WINE
The Barbaresco DOCG of the Pio Cesare winery is produced with 100% Nebbiolo grapes, grown in the vineyards owned by the winery. Vineyards that are located in different points within the Barbaresco area; more particularly in Treiso (Cascina Il Bricco, San Stefanetto and Bongiovanni) and in San Rocco Seno D’Elvio (Rocche di Massalupo).
THE WINEMAKING
After the manual harvest, only carefully selected grapes are brought to the cellar. The winemaking takes place in steel where the grapes macerate on the skins for about 30 days at rather high temperatures. The refinement, on the other hand, lasts about 30 months and takes place for most of the wine in French and Slavonian oak barrels, and for a small part in barriques. After blending and bottling, the wine rests for a few more months in the cellar before being placed on the market.
THE TASTING
Ruby red with garnet reflections. The aroma is intense, with pleasant hints of wild berries alternating with scents of violet, which in turn give way to pleasant spicy notes. Well structured on the palate with important but well polished tannins and a very long persistence.
FOOD PAIRINGS
It goes well with red meats, hard cheeses but also with game.
