THE WINE
The Bardolino Classico from the Santa Sofia winery is a wine produced with a blend of Corvina, Rondinella e Molinara grapes grown in the vineyards owned by the winery and located in the hills of Bardolino; here the soils have a morainic-glacial origin.
THE WINEMAKING
After manual harvesting, the selected grapes are taken to the cellar for winemaking. After destemming and soft pressing, the grapes macerate in stainless steel for approximately seven to nine days. Regarding refinement, the wine rests for at least three months in steel, and after blending and bottling, the wine rests for another three months in the cellar before being placed on the market.
THE TASTING
Intense red with violet reflections. The aroma is enjoyable, with hints of red fruits such as raspberries and black cherries, which leave room for spicy puffs where liquorice prevails. Fresh and juicy on the palate with a captivating bitterness and a good correspondence between aromas and flavour. Persistence is also excellent.
FOOD PAIRINGS
Perfect with white meats, roasts and medium-aged cheeses. Try it with lasagna with meat sauce.
