THE WINE
The Barolo Chinato from the Cappellano winery is a sweet spiced wine, born in the second half of the nineteenth century thanks to Giuseppe Cappellano, who was a pharmacist in Serralunga d’Alba at the time. This Barolo Chinato was originally consumed as a remedy for colds and seasonal ailments, while today, it is recognized as an important local speciality. The Cappellano family continue to produce it with great respect for history and tradition.
Curious, this label is outside the guides and is never reviewed by the critics because the Cappellano family has decided not to provide samples for tastings.
THE WINEMAKING
Barolo Chinato comes from Barolo wine macerated with various spices, including rhubarb, gentian and Cinchona bark and with the addition of ethyl alcohol. The recipe is a family tradition that the winery has decided not to share with anyone. However, we know that after spicing, the wine ages for about 12 months in oak barrels before bottling.
THE TASTING
Deep amber red. The aroma is intense and delicate with the classic hints of Barolo, which intertwine with strong spicy notes of liquorice, marjoram, rhubarb and coriander. Soft, warm and velvety on the palate with a very long persistence.
FOOD PAIRINGS
It goes well with spooned desserts but also with hard cheeses. Try it with chocolate.
