THE WINE
This Barolo Pie Rupestris from the Cappellano winery, comes directly from Elisa’s private collection. It is produced with 100% Nebbiolo grapes grown in the Gabutti vineyard in Serralunga d’Alba; this vineyard, which is quite small (only 1.5 hectares), is considered one of the most valuable crus in the entire Barolo area. Note that the vines are over 60 years old.
THE WINEMAKING
After manual harvesting, only the carefully selected grapes are taken to the cellar for winemaking, which begins with de-stemming. Subsequently the must ferments in steel with the only help of indigenous yeasts. The refinement of the wine, which is not filtered, takes place in large oak barrels and lasts about 18 months. After assembly and bottling, the wine rests for some time in the cellar before being placed on the market
THE TASTING
Intense ruby red. The nose is incredible; notes of licorice and juniper alternated with floral scents of roses, geranium and violets. There is also a slight citrus nuance, hints of licorice and leather but also undergrowth. it continues with pleasant balsamic notes where mint prevails. On the palate it is extraordinary, very well balanced, with velvety and silky tannins and a perfect correspondence between aroma and taste. The persistence is very long with a very pleasant aftertaste of licorice.

This is absolutely a meditation wine to be enjoyed with real friends in front of a nice lit fireplace.
