THE WINE
The black Malvasia Coribante of the Castello Monaci winery is produced with 100% black Malvasia grapes grown in the vineyards owned by the winery that are located in Salento; we are in Puglia.
THE WINEMAKING
After harvesting, only the selected grapes are brought to the cellar for winemaking. Winemaking that takes place in stainless steel tanks at a controlled temperature, with maceration of 10 to 12 days. Refinement also takes place in steel and after bottling, the wine rests for a few months in the cellar before being placed on the market.
THE TASTING
Deep ruby red. The aroma is intense with pleasant fruity notes and herbaceous puffs to close with hints of licorice. Harmonious and velvety on the palate, with a good correspondence between aromas and flavor. Pleasantly fresh.
FOOD PAIRINGS
It goes well with grilled meat and legume-based dishes.
