THE WINE
The Blanc de Blancs vintage 2016 is produced with 100% Chardonnay grapes. The Colmello di Grotta winery owns over 21 hectares of land and its vineyards are divided into two areas DOP COLLIO AND ISONZO, which , despite their proximity, have different characteristics. A reality with a dual personality, infact the winery produces hand and powerful wines thanks to the marly soil of the Collio and softer and more fascinating wines thanks to the calcareous-gravelly soil of the Isonzo.
HE WINEMAKING
The grape harvest is strictly manual and takes place in the second decade of August. After fermentation in steel tanks at a temperature of 18-20 ° for 7-10 days, the sparkling process takes place with the champagne method; the wine rests for 24 months on the lees. After the disgorging it ages for an additional year in the cellar. Pas dose (no added sugar)
THE TASTING
Straw yellow with a fine and elegant perlage. The aroma is fragrant and floral. Dry and elegant on the palate with fruity notes.
FOOD PAIRINGS
It is excellent as an aperitif, it goes well with all the traditional dished from Friuli. Must try with frico and polenta.
