THE WINE
the Blanc de Morgex et de La Salle from the Cave Mont Blanc winery comes from 100% Priè Blanc grapes; it is considered an extreme wine because the vineyards are located close to Mont Blanc at altitudes that many would define as prohibitive. The winery philosophy is to fully respect the typicality and the uniqueness of the grapes.
THE WINEMAKING
After manual harvesting, once in the cellar, the selected grapes are separated from the stem and cold macerated; a light pressing follows which allows separation from the skins. The must then ferment in steel tanks at the temperature found in the cellar. The wine ages in steel tanks for a few months and after blending and bottling it rests for a few more months in the cellar before being placed on the market.
THE TASTING
Straw yellow with greenish reflections. The aroma is pleasantly delicate, with hints of exotic fruit that leave room for scents of almond to close with mineral puffs. Fresh and well-balanced on the palate with a perfect correspondence between aromas and flavor. The persistence is also long.
FOOD PAIRINGS
Excellent with fish. It goes well with medium-had cheeses. Try it with cold cuts.
