THE WINE
The Blanc de Noir sparkling wine pas dosé from the Dorigo winery comes from 100% Pinot Noir grapes grown in the vineyards owned by the winery. As the winey owners say, wine is the food of the soul and it must be good. Their mission is to make good wine and, this Blanc de Noir a perfect example of quality back in production after several years. An amazing sparkling wine at an amazing price!
THE WINEMAKING
The harvest is manual. Once in the cellar, the winemaking in white begins with a soft pressing; the must ferments in second passage barriques; the refinement occurs in wood. The wine is then bottled for the second fermentation and rests on the yeasts for sixty months. Nice to know the “liqueur de tirage”, used by the winery is a little secret lasting more than 30 years.
THE TASTING
Intense straw yellow with golden reflections and a very fine and persistent perlage; the aroma is elegant, with pleasant notes of dried fruit that alternate with toasted hints and puffs of yeast and bread crust to finish with citrus scents. Elegant and full-bodied on the palate, with an almost perfect correspondence between aromas and flavor. The persistence is also excellent, with a refined aftertaste.

Perfect throughout the meal if the menu is fish-based. Try it with shellfish.
