THE WINE
The Château de Laborde dates back to 1700 and is located in Burgundy, one of the most renowned regions in France for its red wines of the highest quality. Here we are in a relatively young reality; in fact, the current owner Hervé bought this castle with his wife in 1998 and has worked hard to restore it to its former glory and produce noteworthy wines.
This Pinot Noir wine made in white is produced with 100% Pinot Noir grapes grown in vineyards owned by the winery. The clones of this Pinot Noir are the same as the Pommard 1er Cru des Epenots; a cru of great prestige. The vines are about twenty-five years old.
THE WINEMAKING
The grapes are manually harvested when the grapes are not fully ripe to preserve the aromatic freshness of the grapes. The selected bunches are collected in small boxes and taken immediately to the cellar. After a soft pressing to allow clear and colourless juice extraction, the winery proceeds with the cold decantation; the wine ages for about eight months, 75% in steel and 25% in new oak barrels. After blending and bottling, the wine rests in the cellar for a few more months before being placed on the market.
THE TASTING
Golden and bright yellow; the aroma is pleasantly fruity, with notes of white peach alternating with citrus scents to close with slightly spicy hints. Fresh and well-balanced on the palate with an excellent correspondence between aromas and flavours, the finish is long and persistent. This Pinot Noir wine made in white from the Chateau de Laborde winery is a real gem to taste.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with white meats and fish. Try it with oysters.
THE WINERY

In 1785 the castle was bought by a former banker named Jean-Joseph de Laborde, who thus became Marquis de Laborde. However, the Marquis was guillotined in 1794, and the castle remained abandoned until 1814… keep reading
