THE WINE
he Blanquette de Limoux brut from the Paul Herpe et Fils winery is produced with 90% Mauzac grapes and Chenin for the remaining 10%.
We are in the valleys of the Limoux appellation at the foot of the Pyrenees, where the vines climb the slopes up to 450 metres. This area is ideal for producing white wines thanks to the almost perfect climate because it enjoys the influence of the ocean, the Mediterranean Sea, and the protection of the Pyrenees.
THE WINEMAKING
The grapes are harvested by hand when perfectly ripe, and only the selected ones are taken to the cellar for winemaking. The wine is wine made using the traditional white method, and after fermentation, the base wine rests for a few months before being assembled for the second fermentation in the bottle. The wine is then bottled with the yeasts and left to rest in the cellar.
THE TASTING
Pale straw yellow; the aroma is pleasantly fresh; fresh fruit notes alternate with hints of flowers to finish with light puffs of spices. This blanquette is fresh and savoury on the palate, with a pleasant correspondence between aromas and flavour and a long and persistent finish.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish, raw fish, eggs, and vegetarian dishes.
