THE WINE
The Trento DOC Blauwal Cuvée extra brut from the Cesconi winery is a unique blend of 93% Chardonnay grapes, 4% Pinot Bianco, and the remaining 3% Pinot Noir. All these grapes are exclusively grown in the vineyards owned by the winery, nestled on the picturesque hill of Pressano, a small hamlet in Trentino.
THE WINEMAKING
The harvest is strictly manual, and only the selected grapes are taken to the cellar for winemaking. After soft pressing, the wine ferments in steel tanks; the still wine then ages in used oak barriques. This follows the composition of the cuvée, which also involves using reserve wines from previous years; this choice brings complexity to the wine without weighing it down. The Blauwal Cuvée from the Cesconi winery is refined in the bottle on the yeasts for at least thirty-six months, but the vintage is disgorged 3/4 times during the process. Therefore, the refinement also varies from 36 to 40 months.
THE TASTING
Deep straw yellow with fine and persistent perlage. The aroma is intense and delicate, with pleasant hints of apple and peach fruit that alternate with scents of lightly toasted hazelnut and bread crust. Fresh and well structured on the palate with an excellent correspondence between aromas and flavour. The finish is long and silky.
FOOD PAIRINGS
Excellent as an aperitif, it goes well with fish dishes, even raw ones. It is perfect throughout the meal if the menu is fish-based.
