The Wine
The Botonero of the Mamete Prevostini winery is produced with 100% Nebbiolo grapes grown in the province of Sondrio at an altitude that varies between 300 and 700 meters above sea level where the soil is mainly sandy and silty.
THE WINEMAKING
The harvest is strictly manual and only the selected grapes are brought to the cellar for winemaking. After a gentle destemming, the grapes are lightly pressed and sent to the stainless steel tanks. Fermentation takes place at a controlled temperature of 25 ° C; the must macerates for 6 days on the skins. After pressing, the wine ages for about 8 months in steel; followed by assembly, bottling and a further short period of rest in the cellar.
THE TASTING
Bright ruby red. The aroma is fresh and fruity with hints of berries that alternate with notes of cherry, currant and strawberry to close with light floral puffs of rose and violet. Fresh and balanced on the palate, with good body; persistence is also good.
FOOD PAIRINGS
It goes well with white meats, cold cuts, vegetables and soft cheeses. Must try with an appetizer of mixed cold cuts.
