THE WINE
The brut grand cru blanc de blancs champagne from the Encry winery comes from pure Chardonnay grapes from the best plots of the Grand Cru vineyards of the Côte des Blancs. We are in the Champagne region, particularly in a town called Le Mesnil sur Oger. All the vineyards of the Encry Maison are cultivated according to biodynamic cultivation criteria.
The brut grand cru blanc de blancs is undoubtedly one of the flagships of the Encry maison and fully represents the beautiful region from which it comes.
THE WINEMAKING
The grapes are harvested manually and carefully selected, and wine made in steel; the winemaking takes place without malolactic fermentation. The wine is then bottled for the second fermentation and remains on the lees for forty-two months; after disgorgement, the wine rests for at least another six months before being placed on the market.
THE TASTING
Golden yellow with a very fine, creamy and persistent perlage; the aroma is intense. You can immediately perceive the minerality, which leaves room for pleasant citrus notes, among which the hints of lemon flowers and orange blossom stand out. Sweet biscuits and toasted bread aromas close. Fresh and pleasantly mineral on the palate with an excellent correspondence between aromas and flavour. It is extremely easy to drink champagne.
FOOD PAIRINGS
This champagne is versatile; perfect as an aperitif, it goes well with fish, even with raw fish, white meats, and cold cuts and cheeses.
