The Wine
The Rosé brut Champagne method of the Pojer and Sandri winery is produced with Pinot Nero (50%) and Chardonnay (50%) grapes grown in the localities of Pianezzi and Palai, respectively at 500 and 700 meters above sea level.
The harvest is strictly manual and only the selected grapes are brought to the cellar for winemaking. The two varieties are wine made separately and ferment in small oak barrels. Both rest for 6 months on the lees, but are mixed every week with the hourglass tecniche (the barrels are turned 180 degrees). In the spring following the harvest, the wine is bottled for the second fermentation. At this point, the cuveè rests on the lees for a period that varies between 18 and 24 months. Disgorgement follows.
Aged pink with copper highlights; the perlage is very fine and persistent. The aroma is wide and complex with hints of red fruits such as cherry and raspberries, which alternate with notes of almond and hazelnut with light puffs of hay. Creamy on the palate, very well balanced with an excellent sapidity An easy-to-drink sparkling wine.
Perfect as an aperitif to share with friends.
